I had a Pollo Veracruz frozen meal for 2. Besides poblano peppers it had chipotle and pasilla chili peppers. It was spicier than I expected but not too hot. The instructions said to cook it 8-12 minutes on medium heat, but it was one big lump that took 12 minutes just to separate the pieces of. I cooked it on top of the stove and stirred it a lot more often than it said and still ended up with the worst burned on mess I can ever remember making.

I used the same CorningWare Visions pot in my old microwave. It barely fit diagonally but I never had a problem burning things. After 30+ years my old microwave still worked but I thought it was time for a new one. It had a timer knob I could turn to set it up to 15 minutes, and the only button on it and was to unlock the door. It didn't have a turntable in it, so I could put that pot in it, but not in my new microwave. I went from having one power level and a single knob to 10 power levels and 24 buttons, some of which have multiple functions. But that's progress.

BTW, Visions is a see-through glass ceramic material you can put it in a fridge or freezer, in a dishwasher, cook with on top of a stove, in an oven, toaster oven, or microwave, and even under a broiler. It's good stuff and won't corrode like my aluminum pot did. I've had my 2.5L saucepan for over 30 years so far. It's outlived its warranty by over two decades. 8)

I thought of something after I posted about the Visions cookware. IIRC when I read the instructions back in the mid '80s, it said to cook things at a 25 degree lower temperature than what recipes and other instructions say. I may be wrong, but even if I'm right, I still haven't figured out how to make fire 25 degrees cooler. I've had nothing but gas stoves, and no matter how low I turn it down the flames are still very hot. Also, when you take the pot off the stove your food will cook for a couple of minutes longer. I think that was what it said.

I just bought a box of cornbread mix a few hours ago. Regular price $1.59 - $1.50 e coupon = 1 happy camper, 9 cents poorer but feeling richer. I should buy a can of diced jalapenos to toss in with the mix. I like doing that.

No store bought mix would compare!

I'll take what I can get for 9 cents. I would have to buy everything except salt and maybe baking soda if I made it from scratch. I bought a 26 ounce carton of Morton salt probably 10 or 20 years ago and it's still almost completely full. If I don't sprinkle on ice in the winter it will probably last longer than I do.

That's pretty cheap eating....can't find fault with that.

But I submit that scratch would be well worth it....... Like Tim said, nothing compares to scratch.

I've never been finicky on most foods and will eat most types of foods prepared in a variety of ways (like the many versions of tater salad), but I draw the line with my cornbread. I've tried it from store-bought mixes, but they just don't stack up. I do like Cracker Barrel's cornbread (and they sell their mix).
