The old Africa hands, like Selous, talk about the need for fat. They could feed themselves and their followers on antelope type meat, but they had to have fat with it .
To solve the problem they would shoot a hippo, giraffe, or wart hog and render down enough fat for a while.
I found it odd that the writers in the American West lie Wm. F. Drannan, and Billy Dixon didn't mention the same problem.

If you haven't tried venison stroganoff you really should. It's great over noodles but would likely taste good with rice too.

I've always mixed my ground venison with either some suet or some plain ground pork.  You don't want sausage as the herbs and spices interfere with the lovely flavor of the venison.  But, a little extra fat helps transfer the flavor of the deer and improves it immeasurably. 

Wild boar responds in similar fashion.  Some added ground domestic pork or some suet lets the flavor come through.

My uncle and I just got through processing two deer. We came out with 70lbs of burger with 10% fat  and four foot pieces of backstraps.

We use the ground venison in everything. It makes great burgers, and even in hamburger helper and sloppy Joes. I've even used in stir-fry with mushrooms, onions, and peppers.
