Spalting (not sure I'm spelling it correctly and too lazy to do a simple web check) is a fungus that gets in the tree and leaves a pattern similar to what is in those grips.  It is very common, desirable, and sought after in maple.  Being a fungus and semi-rot, you stabilize it by filling with cyanoacrylate glue (Super Glue, Krazy Glue, Aron Alpha, etc.).

I see.....they were described as 'soft' wood and I see they are now, after a site update, called 'Alder'

Didn't see an option for Smith and Wesson K - L or N frames but those grips of yours are sharp.
I did a dumb thing a few years ago and left Butler Creek grips on a model 65 that I traded for a 586 6" and now you can't find them anywhere. Hoping Alf might have some knowledge of a pair for sale .
There is room for all of God's creatures ....., That would be on my plate right next to the taters and gravy.
